How many other people out there like soup season? One pot, a complete meal in of itself to me, but it's simple to add a salad and bread sticks. Oh how I love it!!! So much less to clean up and so simple to do! This soup is a family favorite.
Chicken tortilla soup
ingredients:
chicken broth/or water and chicken bouillon 64 oz?
1 can of corn; drained
1 can of petite diced tomatoes, drained and rinsed
2 chicken breasts; cut up
1 can of diced green chilies
1 onion; chopped up
cilantro chopped up and added to your taste
minced garlic to your liking
On the side:
cheese, sour cream, lime juice, and tortilla chips/strips
Fill up a big pot with chicken broth or water and chicken bouillon. Add frozen chicken breasts to water, and rest of ingredients. Bring to boil then remove chicken. By now it should be defrosted enough to cut up into pieces. Return chicken pieces to pot and boil until cooked through. The soup is done now, dish out and add cheese, sour cream, lime juice, and tortilla strips to your liking. Just so you know, you only really need a couple of drops of lime juice!! Or you can leave out the cheese and sour cream to make it a healthier soup. For it being a broth based soup, it's really filling!!!

Chicken Enchiladas
ingredients:
- 1 can cream of chicken soup
- 1/2 cup of sour cream
- 1 tbls. of margarine
- 1 onion, chopped
- 2 cups chopped chicken breast
- 1-2 cans (4 oz.) of chopped green chilies
- 8 (8 inch) flour tortillas
- 1 cup shredded cheddar cheese
Preheat oven to 350 degrees F.
in a small bowl mix soup and sour cream, set aside
melt margarine in med. saucepan, add onion and saute until tender. Add chicken, green chilies, and 2 Tbl. of soup mixture. Cook until heated through.
Spread 1/2 cup soup mixture on bottom of 9x13 pan. Spoon 1/4 cup of chicken mixture into tortillas. roll and place seam down in pan. cover with the rest of soup mixture and sprinkle the cheddar cheese on top.
Bake for 25 minutes in preheated oven.
Charlie and I liked this recipe. The kids, for some reason, did not. You'd think they'd like it with chicken and cheese and all. Don't ask me why they didn't eat it.....
Anyways, I liked it and that's all that really matters!

Chinese night
So tonight we're having chinese food. I'm making egg drop soup, and I got a package of sweet and sour chicken from the store to make. I'm also making rice to put the chicken on.
Egg Drop Soup recipe:
4 cups water
4 cubes chicken bouillon
2 eggs
1 teaspoon dried parsley
1 Tbls. dried minced onion
1 Tbls. cornstarch
In a medium saucepan, combine water, bouillon, parsley, and onion flakes, bring to a boil.
Lightly beat eggs together. Stir in a single direction into soup. *That means if you start stirring clockwise, keep stirring clockwise throughout until the egg is all in the soup.*
Remove about a half a cup of the soup. Stir in cornstarch until there are no lumps, and return to the soup. Boil until soup thickens.
And there you go!
